🍫 No-Bake Brain Boost Brownies

Ingredients
2 cups pecan nuts

2 cups dates

1 cup cacao powder

1 cup desiccated coconut

1 cup mixed seeds (e.g. pumpkin, sunflower, flax)

Maple syrup (to bind)

A handful of raisins

A handful of goji berries

This no-bake brownie-style snack is packed with natural goodness and perfect for a healthy energy boost.

  1. Place the pecan nuts in a food processor and blend until they form a medium-fine crumb.
  2. Add the dates and blend again until well combined.
  3. Add the cacao powder and continue blending.
  4. Gradually add maple syrup while blending until the mixture becomes sticky but not a solid ball.
  5. Stir through the seeds, raisins and goji berries.
  6. Press the mixture evenly into a lined baking dish (about 2–3 cm deep).
  7. Place in the freezer for 1 hour to set.

Store in the fridge and cut into squares when ready to serve.
