A great way to use up ripe bananas and prep breakfasts in advance.
- Preheat the oven to 180°C.
- Mash the bananas in a bowl.
- Stir in the oats, eggs, cinnamon and mixed seeds until well combined.
- Spread evenly into a lined baking dish.
- Bake for 20–25 minutes, until set and lightly golden.
Allow to cool before slicing into squares. Store in the fridge or freezer for an easy, healthy option all week.
